There are actually about 5 aussie servers, but only that one's really used by a fair amount of people. When warcraft first came out PVPGN emulation was poor and i had to play on a taiwanese server. Now there are servers all over the world.
Most likely the other servers Blizzard offers are too laggy for the australians ...
